Caveau du Val d'Amour Vin Jaune 2018 🦄

TWO BOTTLES ONLY - We received 36 bottles of this wine, most are going to our restaurant and retail customers (one or two at a time). This is a rare wine! 

Sylvain Jacquot is based in Cramans, also home to domaines Rolet and Caverodes. A very modest guy with a tiny cellar under his house, his wines are celebrated all around the world for having that indescribable 'Jura magic'. They are made in extremely small quantities and it is only in recent years that he has started selling his wines to customers outside of France. 

We spoke to Stephane Tissot recently and we were talking about how much we love the balance of oxidative wines in 2018. In a warm vintage with higher alcohols, the speed of the fermentation is less, a slower ferment results in a finer, more delicate flor, therefore more controlled oxidative flavours and a great balance between the flavour of the base wine and the flavour of the oxidative winemaking. You can taste this in both Sylvain's Chard/Savagnin wine from 2020 (a warm vintage) and this 2018 Vin Jaune, it's very special.
