Mathilde Savoye grew up in a family of Champagne growers, immersed in viticulture and winemaking her whole life, it seemed inevitable that she would one day become a winegrower. However her father was reluctant for Mathilde to take over the family’s domaine, feeling that it was ‘not suitable work for a woman’ and he had ‘concerns about the daily physical effort’.
Mathilde has proven her doubters very wrong with her remarkable talent and determination. She set up her own Champagne operation from scratch in 2017 after completing her studies and has 3.5 hectares of vines in the Marne Valley region where she makes wines from 100% Pinot Meuiner.
The grapes for these cuvées come from two sites, one is a plot of 15 year old vines around the village of Baslieux-sous-Châtillon (home to top champagne grower Franck Pascal) and the other vineyard is a magical south west facing slope called Les Chapelleries where Matilde has some 55 year old vines.
Vinified and aged in stainless steel, 18 months on lees, this a precise champagne with real finesse. 6g/l dosage, less than 1500 bottles made.
